Ingredients
- 1 Acorn Squash
- 1 cup Quinoa
- 1/2 Red onion medium
- 1 clove garlic
- 1/2 cup Dried Cranberries
- 1/2 cup Pumpkin Seeds
- Parmesan (optional)

Instructions
- Halve squash and remove seeds. Drizzle with olive oil, salt & pepper. Roast at 400 degrees F (cut side down) on baking sheet for 40-50 minutes, until golden and soft.
- Prepare quinoa according to package. (Boil water, add quinoa, cover and simmer on low until water is absorbed.)
- Saute onion and garlic, and mix in with prepared quinoa. Mix in cranberries and pumpkin seeds, to taste.
- Remove squash from oven, fill with quinoa mixture. Top with Parmesan if desired. Eat. Love.
